Ingredients

Adjust Servings:
2 Tbsp Extra Virgin Olive Oil
2 cups Vidalia Onion Chopped
1 pound Hot Italian Sausage Links not Ground
4 Garlic Cloves Minced
3/4 Cup Chicken Stock
1 14.5 ounce can Petite Diced Tomatoes Undrained
1/2 cup Heavy Whipping Cream
14 ounce bag Tortellini Frozen or Fresh
To Taste Salt and Fresh Ground Pepper I use Sea Salt
2 1/2 cups Baby Spinach Fresh
To Taste Parmesan Cheese Sprinkle on top for garnish

Heat your olive oil in a large skillet over medium heat. Add the onions when the oil is hot. Squeeze your sausage links from the tip of the link. and pinch off into the skillet in bite-sized sections. Increase the heat to medium-high, and cook, stirring occasionally until the sausage is browned. Turn the heat down to low, add the garlic, and stir until fragrant, about a minute.

Add the stock. tomatoes, cream, and tortellini to the skillet, and stir to mix well. Turn the heat up to medium-high and bring to a boil.

Cover the skillet, and reduce the heat and simmer for 15 minutes until the Tortellini is tender and cooked through. Sample your sauce, and add the salt and pepper to taste. Add the spinach and blend in until softened and wilted. Remove from heat, ladle into bowls, and top with parmesan cheese. Enjoy with a nice crusty Italian bread!
