14 oz Thai Rice Noodles
1.5 pounds Boneless Skinless Chicken Breast Cut in 1 inch slices
1 Tbsp Peanut Oil
1 Tbsp Hot Chili Oil
2 packed Tbsp Dark Brown Sugar
1/2 cup Soy Sauce
4 Tbsp Rice Vinegar
2 Tbsp Lime Juice Fresh squeezed or bottled
2 Tbsp Fish Sauce
2 tsp Cornstarch
1 1/2 tsp Sesame Seeds Toasted
1 1/2 tsp Red Pepper Flakes
1 Medium Zucchini Cut in half then sliced thin
1 large Red or Orange Bell Pepper Seeded and sliced in strips
1 cup Matchstick Carrots
3 Cloves Garlic Minced
6 Green Onion 1 inch slices with the whites minced
2 cups Bean Sprouts
2 large Eggs
2/3 cup Unsalted Peanuts Chopped
2/3 cup Cilantro Divided

    Spicy Chicken Pad Thai

    Kway Teow phat Thai, which translated is Stir-fried rice noodles Thai (style).  Contrary to popular belief, Pad Thai did not originate in Thailand and is believed to be originated in China!  There’s been much controversy over this, but I’ll let you decide for yourself if you’d like – The Non-Thai Origins of Pad Thai.  It’s quite an interesting read!  Now on to my Spicy Chicken Pad Thai recipe……

    What is Spicy Chicken Pad Thai?

    Well, it’s literally stir-fried rice noodles with beans sprouts, peanuts, other vegetables, red pepper flakes, hot chili oil, cilantro, and a spicy sauce.  Stir-fry is originally a Chinese concept as is the rice noodle, which is why the majority of these types of dishes almost always came from China.

    The recipe itself is pretty versatile when it comes to what you put in it, especially the vegetables.  I use zucchini, bean sprouts, green pepper, red bell pepper (or orange), garlic, and carrots.  You can use whatever you like, but I’d try to stay with vegetables that are well suited for stir-fry, like broccoli, snap peas, cabbage, things like that.  I don’t think that green beans or peas would work very well in this dish.  You can also replace the peanuts with almonds or cashews!

    The SPICY in Chicken Pad Thai

    Not everyone likes a lot of heat in their food, so you can adjust the “heat” to suit your tastes.  For a much milder spicy, omit the hot chili oil and add peanut oil in its place.  For medium heat, add 1 teaspoon of hot chili oil plus a Tablespoon and two teaspoons of peanut oil.  And for the hottest version (yikes), replace the peanut oil with hot chili oil and add more red pepper flakes if desired.

    Is Spicy Chicken Pad Thai similar to Chow Mein?

    Sort of, they are both stir-fried noodle dishes, only Pad Thai is made with rice noodles while Chow Mein is made with Chinese Egg Noodles.  The best thing about these two dishes is that you can switch up the meats!.  That’s right, swap your chicken for beef, pork, shrimp, lobster, crab, even tofu!  The shrimp version is absolutely wonderful!  I can’t vouch for the tofu version though, I won’t touch the stuff!

    What can I serve with Chicken Pad Thai?

    Chicken Pad Thai can be served with all kinds of things.  Fried rice, egg rolls, dumplings, spring rolls, wontons, crab rangoon, whatever you think would pair well with it!  I usually do fried rice and some egg rolls (shrimp).  You can also try a Philippine dish called Lumpia, which is the Philippines version of the egg roll…only I like them so much better (recipe coming soon!) than standard Chinese egg rolls.

    Tips for making Spicy Chicken Pad Thai

    For the rice noodles, I used the “Thai Kitchen” brand.  After soaking them in the hot water, you want to drain them, rinse them, then soak them in cold water if you’re not going to use them right away.  This keeps them soft and non-sticky (rice is sticky after all).

    Have all your ingredients cut, chopped, sliced, minced, and ready to go into the pan!  This recipe cooks up pretty quickly, so you don’t want to delay a step by having to chop or slice your ingredients.

    The sauce recipe is already doubled in the recipe!  But if it’s too much, you can cut it in half.  Personally, I didn’t think it made enough, so I doubled it.  Also, if you like your sauce thin, then you can omit the cornstarch.

    Always put the cilantro in your recipes LAST!  And preferably after you take your dish off the heat.  Cilantro starts to lose it’s flavor when cooked.  If you don’t care for the flavor of Cilantro (are you nuts??) then use a teaspoon of ground coriander, it’s cilantro or Chinese parsley in powder form and doesn’t taste the same.

    Don’t worry about your noodles not being translucent as rice noodles sometimes are when cooked, some brands won’t turn translucent no matter how long you soak them.  If you like translucency, then you can get authentic rice noodles from any Asian Market.

    Prepare the Rice Noodles

    Prepare the Rice Noodles as directed on the package. If you're not using them right away, then drain, rinse, and let soak in cold water until ready to use.

    Prepare the Sauce

    In a small mixing bowl, whisk the brown sugar, soy sauce, rice vinegar, lime juice, fish sauce, and cornstarch together. Add the red pepper flakes and sesame seeds, mix, then set aside. If you like your sauce thin, then leave out the cornstarch.

    Cook the Chicken

    Heat both of the oils in a large heavy skillet or Wok over medium-high heat. Add the chicken and saute until cooked through and the juices run clear about 10 minutes. Scoop the chicken out of the pan with a spatula or slotted spoon reserving the oil.

    Cook the Veggies

    Add the Zucchini, Carrots, and Bell Pepper, saute about 5 minutes or until slightly softened. Add the Garlic, Green Onions, and Bean Sprouts and saute for another 2 minutes. Shove all the veggies to the side and crack the eggs in the middle of the pan, scramble until firm, then incorporate into the veggies. Alternately you can scramble your eggs in another pan rather than using the same pan (this is what I do). Add the Chicken, Noodles, and sauce to the pan and cook for 2 to 3 minutes or until the sauce thickens and coats the chicken, veggies, and noodles. Add the Peanuts and half the Cilantro to the pan and blend in. Serve topped with extra Cilantro, Peanuts, Hot Chili Oil, or Red Pepper Flakes if you desire. Enjoy!
