Ingredients

Dry Enchilada Seasoning
1 tsp Ground Coriander
1 tsp Garlic Powder
2 tsp Dried Minced Onion Flakes
1 tsp Oregano
1/2 tsp Cayenne Pepper
1 tsp Chili Powder
1 tsp Hot Mexican Chili Powder
2 tsp Smoked Paprika
2 tsp Ground Cumin
1 1/2 tsp Salt
1 tsp Sugar
2 tsp Cornstarch
Filling
1 1/2 pounds Boneless Skinless Chicken Breast Cut in thin 1 inch strips
2 Tbsp Extra Virgin Olive Oil
1/2 cup Onion Minced
2 cloves Garlic Minced
1 Serrano Pepper Seeded and minced
1/3 cup Cilantro Finely chopped
1/3 cup Water
Enchiladas
10 to 12 Corn Tortillas Softened in oil
2 cups Sharp Cheddar Cheese Shredded
2 cups Pepper Jack Cheese Shredded
2 cans or 1 large Red Enchilada Sauce
1 medium Avocado Mashed or sliced
To taste Sour Cream
1/2 cup Cilantro Finely Chopped
Optional Lettuce Shredded
Optional Roma Tomato Diced

Simple Budget Friendly Chicken Enchiladas

 

These are very easy to make and won’t break your wallet!  I created this Chicken Enchilada recipe just going through my cupboards one day while deciding what to make for dinner.  I had Chicken and a couple of cans of Enchilada Sauce, and even though I usually make my own sauce, I opted for the canned version for these (I was tired from working all day!).  So let’s make Chicken Enchiladas!

What I came up with was really freakin’ awesome!  Everybody loved them (even though I just threw it together)!  The dry Enchilada Seasoning is a variation of the spices I use in my Enchilada Sauce (recipe at the end of this post) and thought it might serve well as a coating for the Chicken, much like Taco Seasoning.  I cut the water down though, just because Taco Seasoning tends to be a bit runny for my tastes.  But if you like it that way, then, by all means, double the water!  Even with the less water, this Chicken Enchilada recipe does not come out dry!

People are very different when it comes to what they like on their Mexican food.  I put mashed Avocado, Sour Cream, and extra Cilantro, with some Garlic Chili Hot Sauce.  You can add shredded Lettuce, Diced Tomatoes, Onions, Parmesan, crushed Tortilla Chips, whatever you want, and it’ll always taste awesome!

On the side, I have Mexican Cheesy Rice.  This is from a box!  Yes, I was being lazy!  I usually make baked Refried Beans, which is just Refried Beans spread in a medium casserole dish and baked at 325 for 20 minutes.  Then you just top with cheese and bake for another 5 or 10 minutes until the cheese is hot and bubbly.  Top with your favorite toppings.

Making the Dry Enchilada Seasoning

Mix all the spices in a small bowl, including the cornstarch, and set aside.

The Filling

Preheat the oven to 350. Spray a 13x9 baking dish with non-stick cooking spray. Spread 1/3 cup of Enchilada Sauce on the bottom of the pan and set aside. Heat the Olive oil in a large non-stick skillet over medium-high heat. Toss in your chicken strips and saute until cooked through about 10 minutes. Add the Onion, Garlic, and Serrano Pepper. Saute another 2 minutes. Add in 3 tablespoons of the Enchilada Seasoning and the water. Turn the stove down to medium-low. Cook for 5 minutes or until the seasoning has thickened and has coated all the Chicken. NOTE - You're going to add the Cilantro to the pan right before you fill the tortillas. Remove from heat and set aside.

The Enchiladas

Heat 1/2 cup of oil (or more) in a non-stick skillet over medium-high heat. Place a Corn Tortilla on a spatula and lower into the oil, letting it sizzle for about 5 seconds. Quickly lift it out with the spatula and place flat on a plate. Repeat with the remaining Tortillas, adding more oil if needed. Add the Cilantro to the Chicken mixture and blend well. When the Tortillas have cooled slightly, fill each Tortilla with a 1/3 cup of the Chicken Mixture and top with a bit of cheese. Fold the sides in and place in your prepared pan folded side down. Repeat with the rest of the Tortillas, Chicken, and Cheese. Pour your Enchilada Sauce over the top of the Enchiladas (however much you want). Top with Cheese. Place in the oven uncovered, and bake for 30 minutes. Remove from the oven, and top with Cilantro. Let cool for five minutes before serving. Add your favorite toppings - Avocado, Sour Cream, more Cilantro, Hot Sauce, Lettuce, Tomato, whatever you fancy! Enjoy!
