Ingredients

Adjust Servings:
1.5 pounds Boneless skinless Chicken Breast
1.5 tsp Kosher Salt
1 tsp Coarsely Ground Black Pepper
4 cups Chicken Stock Divided
1 Tbsp Extra Virgin Olive Oil
Medium Yellow or White Onion Chopped
1 Jalapeno or Serrano Pepper Seeded and chopped
4 Cloves Garlic Chopped
1 Tbsp Chili Powder
1 Tbsp Ground Cumin
1 Tbsp Smoked Paprika
1 can Rotel with green chilies, undrained
1/3 cup Masa Harina You can find this in the baking isle with the specialty flours or in the international isle.
1 1/3 cups Milk
15 oz can Black Beans drained and rinsed
16 oz can Pinto Beans drained and rinsed
1 cup Frozen Corn
2/3 cup Heavy Whipping Cream
1/3 cup Sour Cream
1/4 cup Cilantro Finely chopped
1 medium Avocado Sliced or cubed
2/3 cup Taco Style Cheese Sprinkle on top when serving

I am a HUGE fan of comfort food!  Anyone who reads my blog and my recipes can probably tell that right away!  This recipe, Savory Chicken Tortilla Soup, is one of my all time favorites!  It’s rich and creamy, and sooo comforting!  I love how easy it is to make, yet it doesn’t taste at all like something you can whip up after working all day (which you can!)  It’s damn near Restaurant quality!

Tips on making Chicken Tortilla Soup?

I don’t really have any!!  Well, except for that you can adjust the spices to your liking.  I usually put a list of tips for preparing and cooking all my dishes into the posts, but this one is so straight forward that there’s really no need.  Yes, it’s THAT easy!  So, I won’t bore you with a whole bunch of mumbo jumbo that usually goes into recipe posts, and let you just get on with the recipe!

Cooking the Chicken

Preheat your oven to 350. Spray a 13x9 inch baking dish with non-stick cooking spray. Season the chicken breasts with the Kosher salt and Ground Pepper, place in baking dish, and pour 1 cup of the chicken stock over the chicken. Bake for 45 minutes or until cooked through, uncovered. Remove from the oven, remove the chicken reserving the liquid. Shred the chicken with either two forks or your nice clean hands! Set aside.

Make the soup base

Heat the olive oil in a large heavy pot or dutch oven. Toss in the onions and peppers. Saute for about 3 minutes, stirring frequently. Toss in the garlic, and saute for 1 minute, stirring constantly. Add the 3 cups of chicken stock and the reserved liquid from the chicken, the chili powder, ground cumin, paprika, and the can of Rotel. Whisk together the 1/3 cup of Masa Harina and the milk until well blended. Stir the mixture into the soup. Cook over medium-high heat, stirring frequently for about 15 minutes or until the soup boils and thickens.

Add all the good stuff!

Add in the chicken, the black beans, pinto beans, and frozen corn. Reduce the heat to low. Stir in the heavy whipping cream and sour cream. Add in the Cilantro. Cook for another 10 minutes or so. Serve topped with extra sour cream, avocado, cheese, tortilla strips, extra Cilantro, if desired! Enjoy!
