1 pound Pasta Any type
6 quarts Water
4 Tbsp Salt Kosher or Sea Salt
2 Tbsp Extra Virgin Olive Oil
1/3 cup Onion Finely chopped
5 cloves Fresh Garlic Finely chopped
35 ounce can Whole Italian Plum Tomatoes With the liquid
1 tsp Red Pepper Flakes Or to taste
1 tsp Sea Salt Or to taste
1 tsp Coarse Ground Pepper Or to taste
1 cup Heavy Whipping Cream
3 Tbsp Unsalted Butter
1 1/2 cups Fresh Parmesan Cheese Grated
1/3 cup Fresh Parsley Finely chopped
Optional
1 pound Chicken Breast Diced and Sauteed
1 pound Med-Large Fresh Raw Shrimp Cleaned and sauteed
1 pound Italian Sausage Pinched off into small bite sized pieces and sauteed
3 cups Fresh Baby Spinach

Pasta with Tomato Alfredo Sauce

Pasta is such a diversified food, which is why I used the word “Pasta” instead of specifying a type in my Pasta with Tomato Alfredo Sauce recipe.  Any type of Pasta can be used for this recipe, I just happened to use Linguine.  Linguine is between Spaghetti and Fettuccini when it comes to the size of the noodle.  Spaghetti noodles just happen to be too thin for my taste.  But….YOU can use your favorite!

Interesting Pasta Facts!

Did you know that Pasta didn’t originate in Italy?  It is a common misconception that since pasta dishes are mostly Italian, that pasta was originally invented in Italy.  Let’s face it, Italian Pasta is simply the BEST!  So why wouldn’t we assume this?  Even I thought this until I researched it, and here are the facts…..Are you ready?  Pasta was brought over to Italy by Marco Polo in the 13th Century, from China!  YES, China!  Turns out, the Chinese have been enjoying Pasta since as early as 3000 B.C.!  Now there’s something to discuss over your next Spaghetti dinner!

A few Tips for cooking Pasta with Tomato Alfredo Sauce

This dish is pretty easy, so there are not many tips to be given here.  Mostly my tips will be more along the lines of recommendations…..but they can be regarded as tips!

  • Like I stated earlier, the pasta you use really doesn’t matter.  I used Linguine for this recipe, but I have used Tortellini and it came out awesome!  Ziti and Rigatoni work well also.  What would be totally fantastic would be the use of Manicotti or Giant Shells, filled with your favorite filling, and then the sauce poured over it!  Oh my Lord, can you just imagine??  I think I just made up a new recipe!
  • People view “cream” differently.  Usually when a recipe states “cream”, it means heavy cream or heavy whipping cream.  There are some out there that think “half and half” equals cream.  Let’s make this perfectly clear….it does NOT!  Half and Half is exactly what it states, half cream and half milk!  This particular recipe uses Heavy Whipping Cream!
  • Whole Plum Tomatoes come in a few varieties, you want Italian Plum Tomatoes!  “Hunts” does make whole plum tomatoes, you can add a couple teaspoons of Italian Seasoning to them while you pulse them in the blender.  Remember to not keep the blender going on puree, just pulse a few times until the tomatoes are broken up but still a little “chunky”.  Don’t drain the tomatoes, you want the tomatoes and the liquid in this recipe.
  • There are red pepper flakes in this recipe, the amount used is up to you.  If you like “spicy”, then add more than what the recipe calls for.  If you don’t want a lot of “spice”, then cut the amount in half, or omit it altogether!  I grew up on “spicy” so that’s how I like my food!!
  • You can use Parmesan blends in this recipe, like Parmesan/Romano/Asiago blend!
  • At the end of the Ingredients list, I added some optional “add-ins”.  In the picture below, I used Chicken in my recipe.  I just diced up some Chicken Breast, threw some garlic powder, sea salt, and cracked pepper on it, and sauteed it.  You can do this with shrimp or Italian sausage also.  Spinach even works well in this recipe, and gives it more color!!

In a large pot, bring 8 quarts of water and 4 tablespoons of Kosher or Sea salt to a rolling boil.

While the water for your pasta is heating up, pour the can of tomatoes into your food processor or blender. Pulse until the tomatoes are broken and still a little chunky. You're not fully pureeing here, so be careful! You can always just put the tomatoes in a bowl and use a potato masher or your hands to crush them up! Set aside.

In a large deep pan, heat the 2 Tbsp of Olive Oil over medium heat. Toss in the onion and garlic, and saute until translucent and fragrant, about 5 minutes. Pour in your tomatoes, add the salt, pepper, and red pepper flakes. Bring to a boil, then turn down the heat and simmer for about 15 minutes or until the sauce is reduced slightly.

By now the water for your pasta should be boiling. Add your pasta, and cook according to the package directions. While the pasta is cooking, add the butter and heavy whipping cream to the sauce and stir to incorporate well. Once the pasta is done, drain and add to the pot (add your optional add-ins at this time too). Stir into the sauce to coat the pasta. Add the cheese, and stir again until the cheese is incorporated. Add in the chopped Parsley. Serve immediately topped with more grated parmesan and parsley. Enjoy!
