Memphis Rub
1/4 cup Dark Brown Sugar
2 Tbsp Smoked Paprika
2 Tbsp Ground Black Pepper

1 Tbsp Garlic Powder
2 tsp Ground Mustard Powder

1/2 tsp Cayenne Pepper or more to taste

    Memphis Style Pork Ribs

    It’s almost Grilling time!  Dust off that BBQ grill, wheel it out of your garage or pull the tarp off of it….because we are about to get down and dirty with some Memphis Style Pork Ribs!

    But why are they called “Memphis Style”?

    The “secret” is in the RUB!  You see, each type of meat rub uses a unique blend of spices that originated from where they were created.  Two of the most popular are “Memphis Style” and “Kansas City Style”.  The same holds true for Barbeque Sauces.  I love both of these, but I am partial to Memphis Style!

    The Memphis Style Pork Rib Rub

    Memphis Style uses a blend of sweet and spicy spices for its unique flavoring.  Dark brown sugar blended with Cumin, Smoked Paprika, Chili powder, and Cayenne gives this rub a sweetness with a spicy tang that cuts the sweetness down to a notch.  I mean, you don’t want your ribs too sweet, do you?  The rub is also pretty versatile to where you can add more or less of the main spices to your own tastes.  I like mine pretty spicy, so instead of regular Chili Powder, I use Hot Mexican Chili Powder instead!  I also add an extra teaspoon of Cumin and Smoked Paprika.  You can play with it and make your own perfect Memphis Style Rib Rub.

    Using different types of Ribs

    I used boneless Country Style Pork Ribs for my recipe, but you can use any type of ribs you like, even beef!  This recipe works well with both pork and beef spare ribs!  Want a unique flavor for your burgers?  Add some of this rib rub into your hamburger before shaping into burgers!  Rub it on a pork loin and toss it on the grill, the flavor is outstanding! TIP:  Slice a few cloves of Garlic into fourths, pierce your pork loin several times about an inch deep, and plow your garlic down in the holes.  Then slather with your rib rub and grill to perfection!

    Tips for cooking Memphis Style Pork Ribs

    • All meat cooks better and more evenly if brought to room temperature before cooking.  Try to take your ribs out of the fridge at least 30 minutes before you plan to pop them in the oven or on the grill.
    • Kosher Salt is rubbed on meat to “lock in” the juices so your meat doesn’t dry out.  It also gives your meat that nice crust!
    • I add about 1/4 cup of water to every cup of BBQ sauce to thin it out a bit.  If you’re using a whole bottle of BBQ sauce, then fill the empty bottle 1/3 the way up and shake.  Then pour it into your sauce and stir to mix.  The sauce doesn’t end up being too thick or clumpy on the meat and instead leaves a nice glaze.
    • When at the broiling step, I basted my ribs about every three minutes or so.  I like a nice Charcoal on top of my ribs, but you can broil them for however long you wish.  The purpose of this step is to achieve that nice crust on the top layer of your meat that you get when grilling!
    • Don’t “par-boil” your ribs first!  There’s no need, they will come out fork tender if cooked correctly!

    There you have it, folks!  An easy rib recipe that tastes like you just pulled them off the grill!  These Memphis Style Pork Ribs are very easy to make and are also budget friendly!  TIP:  Make a big batch of the rub and place it in an airtight container or ziplock bag!  It’ll keep for about 6 months!

    Prepare the Ribs!

    Dry the ribs by patting down with a paper towel. Season generously on all sides with Kosher Salt and Fresh Ground Pepper. Add all of the spices for the rub to a medium bowl and mix thoroughly. Rub each rib generously with the rub on all sides, and place on a platter lined with wax paper. Place the ribs in the refrigerator for 1 hour.

    Cooking the Ribs!

    Line a large baking dish with aluminum foil and place a rack in the middle. Spray generously with non-stick cooking spray. Preheat the oven to 450 degrees. Take the ribs out of the refrigerator (take out of the fridge and bring to room temp if cooking on the grill) and place each rib on the rack inside your baking dish, making sure they are not touching each other (don't over-crowd). Place on the center rack of the oven and cook for 15 minutes. Turn the oven down to 375 degrees and cook for another hour. The last 15 minutes of cooking time, start basting your ribs with your BBQ sauce. Turn the oven up to broil, and broil the ribs for about 10 to 15 minutes, or until the outside of the ribs are to your liking, basting frequently with your sauce. Remove from the oven and let rest for about 5 minutes. Serve and enjoy.

    To Cook on the Grill!

    Bring your ribs to room temperature after you remove them from the fridge. Spray the grill racks generously with high-temp non-stick cooking spray. Lay the ribs on the grill racks and grill as you would for ribs except don't start basting until the last 15 minutes of cook time (they may burn otherwise). Remove and let rest for 5 minutes before serving.
