10 Medium Yellow or White Potatoes Peeled
1 Cup Sour Cream
8 ounce package Cream Cheese
2 Tbsp Minced Onion Flakes
To Taste Salt and Pepper
2 Tbsp Butter Melted
2 tsp Smoked Paprika
2 Tbsp Chives Dried or Fresh

    Baked Cream Cheese Mashed Potatoes

    A Pan of Heaven!

    Have you ever thought to combine mashed potatoes and cream cheese?  Unlike traditional mashed potatoes, this recipe uses no milk or chicken broth!  Cream cheese and sour cream are what’s used to create potatoes so rich and creamy, that you’ll literally get addicted to it!

    Twice Baked (or cooked)!

    I can’t really say that these are “twice” baked, because you’ll only be “baking” it once.  The potatoes are boiled just like traditional mashed potatoes, then baked in a casserole dish with all the wonderful ingredients that go in it!  The top of the dish comes out slightly crusty while leaving the inside rich and creamy.  I swear I can eat these every day!  You really need these Baked Cream Cheese Mashed Potatoes in your life!

    Tips for these Mashed Potatoes!

    Forget the regular gravies for this recipe, they won’t taste right.  Instead, opt for a cheesy sauce, like a Mornay Sauce!  For these Mashed Potatoes, I use the sauce that I put over my Chicken Cordon Bleu (I’ll be posting it soon!).  It’s a rich creamy sauce made from swiss cheese and heavy cream.  I also dip my French Bread in it 🙂  Don’t worry about mixing other cheeses with cream cheese, they work well together, and make this Mashed Potato recipe all the more better!

    Baked Mashed Potatoes with Cream Cheese! This dish is so rich and creamy, your taste buds will fall in love! Made with cream cheese, sour cream, butter, and chives...baked to a creamy deliciousness! #potato #creamcheese #sidedish #sourcreamandchives |








    Preheat your oven to 325 degrees. Prepare a 9x13 inch casserole dish and spray with cooking spray. Peel and wash your potatoes, and place in a large pot of water. Bring the water to a boil, turn your pot down to medium-high, and cook until the potatoes are fork tender. About 20 minutes.


    Remove your potatoes from the stove, and drain. Place the potatoes in a large bowl, then add the sour cream, cream cheese, minced onion, and salt and pepper. Mix well with an electric mixer until the mixture is a consistency that you like.


    Spread the potatoes in your prepared pan and even out the top. Melt the 2 Tbsp of butter, and drizzle on top of the potatoes. Sprinkle the smoked paprika and chives over the top of the butter. Cover with foil and place in the oven for 30 minutes. After 30 minutes, remove the foil, and bake for another 30 minutes. Remove from the oven and let cool for 10 minutes before serving. TIP: I make this with my Chicken Cordon Bleu. The sauce from the chicken makes a very rich and awesome topping to go over these potatoes!
