      Keto Southern Fried Cabbage

      There’s much to be said about Southern food!  Everyone loves it, including me!  Does it matter if practically everything is cooked in some sort of pan drippings?  NOPE!  Pan drippings are essentially FAT from the meat that we cook, and what better to add flavor to our food.  On the Keto Diet, we eat a lot of fat because that is basically the fuel for our bodies.  And this Keto Southern Fried Cabbage recipe is no different, the bacon fat is the main flavoring!

      This is a Keto version of a great Southern Favorite! Southern Fried Cabbage, with it's crispy bacon, sauteed onion, garlic, cabbage, and spices all sauteed in pan drippings!       What makes this Fried Cabbage dish Keto?

      There are essentially almost no carbohydrates in this dish (4g).  The dietary fiber count is 2g, so subtract that from the total carbs, and you get 2g net carbs per serving (1 cup).  You’re adding bacon and it’s drippings to the dish which are high in fat and moderate in protein.  The Keto diet goes by a 75-20-5 rule.  That is 75% fats, 20% of proteins, and 5% carbohydrates.  This dish well represents that, and it tastes DAMN GOOD!

      Tips for making Keto Southern Fried Cabbage

      • I’ve found that using thick sliced bacon rather than the regular thin type works best for this dish.  Plus you get more drippings!
      • I used Green Cabbage for this recipe, but you can use any type of cabbage you like, even Napa or Bok Choy.  I’m not quite sure how well this would do with purple cabbage, though it would make for some interesting color!
      • You can use regular Paprika instead of Smoked if you can’t find it.  You can also add other seasonings as well!
      • Don’t substitute the pan drippings for olive oil or butter!  Or any kind of oil for that matter, this dish won’t turn out right because the bacon drippings are the main flavoring!  If you’re like me and keep a jar of bacon fat in your fridge, then you can add that to the dish if you wish to omit the bacon (but WHY???).
      • This dish goes well with practically anything as a side dish or even a main dish!

      Sizzle the Bacon

      In a large non-stick skillet over medium heat, fry the bacon until crispy. Remove the bacon and place on a plate. Leave the bacon drippings in the pan!!

      Saute the onion and garlic

      In the same pan as the bacon drippings, over medium heat, saute the onion and garlic until softened and fragrant. Add the salt, pepper, and smoked paprika. Stir to mix well.

      Add the cabbage

      Add the cabbage, turn the heat down to medium-low and saute until the cabbage is softened but not mushy, about 3 to 5 minutes. Add the crumbled bacon back to the skillet and mix with the rest of the ingredients. Adjust spices if desired! Enjoy! TIP - You can eat this as is, or add 1 Tbsp of dark brown sugar before adding the cabbage if you don't want the Keto version. Other add-ins would be, hot sauce, carrot sticks, red pepper flakes, shredded brussels sprouts, nuts, other spices, anything that pairs well! You can even switch the bacon to sausage if you prefer!
