1 8oz box Jiffy Cornbread Mix Prepared but uncooked
1 Cup Sour Cream
1 Stick Butter Melted, don't use margarine
1 Cup Cheddar Cheese Shredded
1 Tbsp Chives Fresh or dried

    Who doesn’t love a good casserole?  This Corn Casserole is actually a side dish, but you can make many variations.  Try adding some meat, like bacon or ham, even some sausage!  Make sure the meat is cooked first, HA!

    Corn Casserole for Potlucks and Holidays

    This casserole is a great dish to bring to any potluck!  I’ve had such huge success with it that I typed up the recipe and bring multiple copies to give out!  People just seem to love it, and you will too!  Add a unique dish to your holiday menu by adding this corn casserole recipe.  Your guests will think you spent hours creating it!

    Preheat your oven to 350 degrees. Spray a baking dish with non-stick cooking spray. I use a 9x9 baking dish, but you can use any size you want provided the mixture fits in the pan. *Note - The deeper the pan, the more time it'll take to bake your casserole. Plan on adding more cooking time!


    In a large mixing bowl, combine the corns, the prepared cornbread mix, sour cream, and the melted butter. Stir to mix well, then pour into your baking pan, and smooth out the top. Bake for 45 minutes until golden brown.


    Remove the casserole from the oven, and sprinkle the cheddar cheese on top, and add the chives. Return your dish to the oven, and continue to bake for another 5 to 10 minutes, or until cheese is melted and bubbly.


    Remove from the oven, and let stand for 5 to 10 minutes. Serve warm!
