2 15 ounce cans White Hominy With the liquid, or drain the liquid and use 1 cup chicken stock
2 Tbsp Butter
To taste Salt and Pepper
1/4 cup Cheese Parmesan, cheddar, whatever you like
1 tsp Chives Fresh or dried

    Homemade Cheesy Hominy Grits

    Homemade Cheesy Hominy Grits is a delicious, budget friendly, and very easy dish to make!  I literally created this just looking through my cupboards one day lol.  I mean seriously, 2 cans of Hominy on sale for 50 cents apiece, a bag of cheese at $1.99, and other ingredients that you probably already have on hand.  That’s $2.49!  Can’t beat that!

    I’m not a fan of Hominy Grits!

    I’m from California, we don’t eat grits!  I didn’t even know what a grit was until I moved to the East Coast, and I had to be bribed into eating them.  I still didn’t care for them!  Sooo, me being me, I found a way to “tweak” the standard Grit recipe, and came up with this one.  For more added flavor, try adding some fresh garlic!  You can even come up with some “tweaks” of your own, the base of the recipe is there, just play with it!

    In a medium sauce pan, bring the hominy and liquid to a boil, turn the heat down to medium-low, cover and cook for 15 minutes. If some of the liquid evaporates, then add up to 1/2 cup water.

    Remove from heat and pour into your food processor or blender. Puree until it's a consistency that you like. Stir in the butter and salt, and pulse again a few times to integrate.

    Scoop into bowls and top with the cheese and chives. Add more butter if desired. Enjoy!
