Ingredients

Adjust Servings:
4 Cups Water
8 Cubes Chicken Bouillon
3 Tbsp Cornstarch
4 tsp Sugar
2 Tbsp Oyster Sauce
4 tsp Soy Sauce
1 1/2 Lbs Boneless Skinless Chicken Breast Cut into bite sized cubes
2 Cups All Purpose Flour Seperated
2 eggs
2/3 Cup Milk
1 tsp Salt
1 tsp Fresh Ground Pepper
2/3 Cup Cashews Halved
1/2 Cup Green Onion Chopped fine

My daughter's Favorite Cashew Chicken recipe that I make for her. Cashews, deep fried chicken, oyster sauce, and green onions, served over rice or by itself. Add a side of egg rolls, or fried rice, and you have an awesome meal, and crowd pleaser!

    Cashew Chicken is a favorite dish in many Chinese restaurants!

    There are so many versions……

    But, this is the only one you’ll need!

    My daughter loves this dish!  It is her all-time favorite thing that I make!  Kimberley is a connoisseur of all things Asian in the world of food!  Ask her what she wants for dinner, and it’s Cashew Chicken every single time!  This Cashew Chicken!

    You’ll see for yourself why she loves it so much!  The sauce is very flavorful, and the Nuggets are deep fried to a golden brown, then drenched in the sauce, for a wonderful mix of tastes.  Add the cashews and green onion on top, and BOOM!  A dish made in heaven!

    Pick your sides!

    The great thing about Asian food is that there are so many sides that can go with your main dish.  Add some egg rolls, some crab rangoon, fried rice, lo mein, chow mein, and the list goes on and on and on!  There’s always a perfect fit with what you can compliment your main with.  Cashew Chicken is no different.  I make my own fried rice (I’ll be adding the recipe soon), and a bunch of egg rolls.  You can even just serve your Cashew Chicken over white rice and it would still be awesome.  It is also wonderful just on its own!

    First, we make the sauce. Bring 3 cups of your water to a boil in a medium saucepan. Dissolve the bouillon cubes in the boiling water. Mix the cornstarch with the remaining 1 cup of water in a small bowl, and add it to the saucepan, then allow to thicken stirring occasionally. Stir in the sugar, oyster sauce, and soy sauce, then remove from heat, cover and set aside.

    Next, we make the chicken nuggets. In a large bowl, flour the chicken cubes with 1 cup of the flour, and let stand for 10 to 15 minutes. In a small bowl, beat the eggs, milk, salt, and pepper together with a fork. Add the remaining flour to another small bowl. Remove about 6 to 8 pieces of chicken from the bowl, and dip in the egg mixture, then roll in the bowl of flour. Deep fry using whatever method you prefer (oil, deep fryer, air fryer, etc), until the pieces are golden brown, about 2 to 3 minutes a batch. If using oil and a pan/pot, don't use one that has a non-stick coating or you'll burn the chicken's coating lol. Also, after removing the chicken from the pot, scoop out the bits of batter that you see floating around the oil, these will burn too and stick to your chicken. Place the deep fried chicken in a large casserole dish lined with paper towels to drain. I wanted to add pictures for this step, but I make a HOLY MESS when making this dish!

    Now we make it pretty! Remove the paper towels from under your chicken, and place the chicken in the oven at 180 degrees to keep it warm. Heat the sauce at medium-low temperature, stirring occasionally. Chop up your green onions, and half your cashews if you didn't already buy them that way. When your sauce is heated through, remove the chicken from the oven, pour the sauce over it, sprinkle the green onions and cashews over the top. Serve over white or fried rice if you prefer, but I'll tell ya, this recipe is awesome on its own!
