2 sticks (1 cup) Unsalted Butter
1 1/4 cups plus 1 Tbsp Sugar Divided
1 Egg Yolk
1/2 cup Sour Cream
2 1/2 cups All-Purpose Flour
1/4 tsp Salt
1/2 tsp Nutmeg Grated
1/4 tsp Ginger Ground
Filling
1 stick Butter Softened
1/4 cup Shortening
2 1/2 cups Powdered Sugar
2 Tbsp Brandy or Milk

    Buttery Rich Eggnog Cookies

    A sweet treat to add to your Holiday baking!

    I bake a lot during the holiday, and I mean A LOT!  I came across these little gems a few years back and was really impressed with how good they are.  Now, mind you, I’m not to keen on sandwich cookies (except peanut butter Oreos!), but these were just awesome.

    Cookies so awesome you can’t stop eating them!

    I hope you can stop!  Everyone gains a little weight during the holidays, but come on!  Seriously, I can eat the whole batch!  I’ve always had success with these when I put them in my gift baskets at Christmas.  They go very well with Rum Balls, or Walnut Balls.  Speaking of Rum balls, I made a batch one year and all I had was 180 proof Rum!  I made them anyway, and I think I got a little tipsy just off the fumes!  I would encourage you NOT to do that!

    Extra Tips for my Eggnog Cookies

    The baking time says 12 minutes, but if you’re using a pan that has a non-stick coating, decrease the baking time by 2 minutes.  You don’t have to, but personally, I like my cookies soft and not crumbly!

    Don’t try this recipe using Margarine, it won’t taste right.  And….no….just NO!  I can tell you awful things about Margarine!

    For a different flavor, try using cream cheese instead of sour cream!

    Preheat your oven to 350 degrees, and lightly grease your cookie sheets.

    For the Cookies

    Beat the 2 sticks of butter and 1 1/4 cups sugar in a large bowl with an electric hand mixer at medium speed until light and fluffy. Add the egg yolk, and beat until blended. Add the sour cream, and beat until well blended. Combine the flour and salt in a small bowl, gradually add the flour mixture to the butter mixture, beating until well blended.

    Shape the dough by rounded teaspoonfuls into balls, and place on your cookie sheets. Flatten each ball slightly with the bottom of a spoon. Combine the remaining 1 tablespoon of sugar, nutmeg, and ginger in a small bowl, and sprinkle over the cookies.

    Bake for about 12 minutes or until the edges are golden brown. Cool for 5 minutes on the cookie sheets. Remove the cookies to a wire rack to cool completely.

    For the Filling

    Beat the 1 stick of butter and shortening in a medium bowl until well blended. Add the powdered sugar and brandy, beat until well blended. You can either pipe, use a cookie press attachment, or manually spread the filling on the bottoms of half of the cookies. Top with the remaining cookies. Makes around 6 dozen sandwich cookies. The serving size is one cookie.
