4 Boneless Skinless Chicken Breast Pounded down to 1/2 inch
2 Tbsp Extra Virgin Olive Oil
1/3 cup All-Purpose Flour
1 tsp Salt
1 tsp Freshly Cracked Pepper
3 Cloves Garlic Minced
1/3 Cup Fresh Parsley Chopped fine
1 Cup Baby Bella Mushrooms Sliced
2/3 Cup Dry Marsala Wine or use chicken stock or Marsala cooking wine

    Easy Chicken Marsala

    An easy dish that’s ready in about 30 minutes!

    When it comes to dinners, I’m all about easy lately.  I work full time and I work here on my Blog, so I barely have enough “Me” time, and forget lavish dinners during the week!  Not happening!  That’s what makes this recipe so great, it’s fast, easy, and tastes like you slaved over the stove for HOURS!  It’s THAT good!  This Chicken Marsala recipe was originally a long drawn out process, and I cinched it down to make it fast and easy without compromising the quality or taste.

    About Marsala Wines

    If you’re not familiar with Marsala wine, Marsala wines come from Sicily, are amber colored, and have a similar flavor to Sherry although richer.  Marsala wine is either dry or sweet, with the dry wines being used in savory dishes, and the sweet wines are used mainly in desserts.  You’re going to be using Dry Marsala in this recipe.

    Tips for cooking Chicken Marsala

    • After pounding down and dredging the chicken, let it sit for 15 minutes.  The flour coating stays on the chicken better and helps to seal in the juices.
    • Use fresh garlic and fresh parsley instead of jarred and dried.  It’s totally a taste thing!!
    • Portabella and Baby Bella mushrooms brown much better than button mushrooms, and have a better and richer flavor.
    • When cooking the chicken, if your wine evaporates too much, just add 1/4 cup more at a time.
    • When cooking the garlic and parsley, stir continuously so it doesn’t burn.
    • Never, ever substitute Marsala wine with something else!  I guarantee that it won’t taste right (yes, I’ve tried!)!  You may be able to get away with using Dry Sherry or even Marsala cooking wine from your grocery store, but…why?

    Pound the Chicken

    Pound down your chicken breasts between 2 sheets of waxed paper, using a meat mallet, to 1/2 inch thickness. Mix together the salt, pepper, and flour. Dredge the chicken in the flour, covering both sides, shake off excess and place on a plate. Set aside.

    Saute

    Heat the olive oil in a large skillet over medium-high heat. Add the garlic and parsley, and saute for about 5 minutes.

    Brown the Chicken

    Add the chicken to the skillet and brown on both sides. Turn heat down to medium.

    Cooking the chicken in the wine

    Add the Marsala and mushrooms. Cook over medium heat about ten minutes each side or until juices run clear, turning only once.

    Dinner is served!

    Dredge the chicken in the remaining pan juices and serve topped with the mushrooms! Enjoy!
