Ingredients

Adjust Servings:
6 to 8 pieces Chicken Any type you prefer, Thighs, breasts, etc
1 stick Butter Not margarine
1/2 cup Lemon Juice Fresh squeezed or bottled
1 Tbsp Dark Brown Sugar
1 Tbsp Paprika
1 Tsp Cayenne Pepper
2 Tbsp Rosemary Fresh or dried
1 tsp Nutmeg
1 tsp Salt
1 tsp Fresh Ground Pepper
1/3 cup Cilantro Fresh, Chopped, or you can use Parsley

      A fantastic blend of flavors roasted to perfection!

      I created this Butter Roasted Chicken recipe quite a few years ago.  I would tell you how long ago, but then you’d know how old I am HA!  Anyway, I was stuck one day on what to make for dinner.  Being a Mom of small children, and a military wife, we didn’t have a lot of money.  So I searched my pantry and cupboards for anything I can pour over a huge pack of chicken thighs I had thawed out.

      This is what I came up with!

      I was quite nervous about the thought of using butter and lemon juice together.  But I thought, what the hell, and gave it a shot.  Man oh man did I stumble on something awesome!  My husband (at the time lol), asked me where I got the recipe, and when I told him that I just made it up, he didn’t believe me!  He loved it!  And I’m sure you will too!

      Try it for yourself!

      Of course, I’ve “tweaked” it a bit here and there, like the addition of Cilantro.  I LOVE Cilantro, and added it just to see how well it would blend into the flavors.  You can use parsley if you like, or even chives, to give it some additional color!  Let me know in the comments how yours turned out!  This recipe is considered a Keto dish!  To learn more about the Keto Diet, click here The Keto Diet Explained

      Preheat the oven to 325 degrees. Wash and dry your chicken pieces, then put them in a 9x13 casserole/baking dish. In a medium saucepan, add the remaining ingredients except for the cilantro, and heat over medium heat until the butter has melted. Stir to incorporate well. Pour over the chicken.

      Put the chicken in the oven, uncovered. Roast for 90 minutes or until juices run clear, and the top of chicken has browned. Baste with a turkey baster every 15 minutes or more during roasting.

      During the last 5 minutes of cooking, spread the chopped cilantro over the chicken and return to the oven. Take the chicken out when done, and let rest for 5 minutes before serving. Serve with a tablespoon of pan juices over the top of each piece. Enjoy!
